Ingredients

  • 2 medium zucchinis
  • Salt
  • Pepper (freshly ground)
  • olive oil (for frying)
  • 250 g sheep cheese (feta)
  • rosemary sprigs
  • olive oil (for serving)

Instructions

    Wash, trim, and slice zucchini lengthwise into 10 very thin slices or shave. Heat a little oil in a pan and fry the zucchini pieces in batches until lightly browned on both sides, seasoning with salt and pepper. Remove from pan onto paper towels to drain excess oil and cool.

    Cut feta into 20 small, even pieces and wrap one piece of cheese in each zucchini slice. Secure with rosemary sprigs.

    For serving drizzle a little olive oil over the plate and arrange the zucchini rolls on top.

    Serve with white bread.
