Ingredients
- 2 Eggs
- 2 tbsp coarse mustard
- 3 tbsp apple cider vinegar
- 2 tbsp Rapeseed oil
- 2 tbsp pumpkin seed oil
- Salt
- black pepper (freshly ground)
- a pinch of sugar
- 150 g fermented cabbage
- 2 tbsp pumpkin seeds
Instructions

Hard boil the eggs for about 10 minutes.

While the eggs cook, whisk mustard, vinegar, both oils, salt, pepper and sugar together in a bowl to make the dressing.

Rinse, dry and roughly chop the fermented cabbage. Cool the eggs, peel them, slice into rounds then cut into strips.

Toss the egg strips with the cabbage, pumpkin seeds and dressing, seasoning to taste.
