Ingredients

  • 2 carrots
  • 2 Zucchini
  • 100 g radishes
  • 2 stalks celery
  • 1 handful lamb's lettuce
  • 5 EL olive oil
  • 2 EL white balsamic vinegar
  • 2 EL lemon juice
  • 1 pinch sugar
  • Salt
  • Pepper (freshly ground)
  • watercress (for garnish)

Instructions

    Peel the carrots and slice them. Wash, trim, and slice the zucchini and radishes. Rinse, trim, and cut the celery into pieces. Wash, rinse, and drain the salad.

    Whisk 3 EL olive oil with balsamic vinegar, lemon juice, and sugar; season with salt and pepper. In the remaining oil sauté carrots, zucchini, and celery for 1–2 minutes. Season, remove from heat, and let cool slightly.

    Add radishes to the dressing and let sit about 15 minutes. Fold in lamb's lettuce, taste, and serve on individual glasses garnished with watercress.
