Fennel Salad with Raisins

Ingredients
- 80 g raisins
- 75 ml apple juice
- 50 g almond slivers (or almond sticks)
- 2 tbsp capers
- 1 Red Onion
- 1 kg fennel
- 1 handful parsley
- 1 lemon (juice)
- 4 tbsp olive oil
- Salt
- Pepper (freshly ground)

Soak the raisins in apple juice. Roast the almonds in a dry pan until fragrant and golden brown, then remove and let cool. Drain the capers and finely chop them. Peel the onion and slice into thin strips. Wash, trim, quarter the fennel, cut off the core, and slice into fine ribbons. Rinse the parsley, shake dry, and pick the leaves.

Whisk together lemon juice, olive oil, salt, and pepper. In a large bowl combine the fennel, raisins with juice, almonds, capers, onion strips, parsley, and dressing. Taste and serve immediately.
