Fennel Salad with Orange and Onions

A fresh fennel salad featuring orange slices and onions, a vibrant fruit‑vegetable dish from Spoonsparrow.

Ingredients

  • 1 mild red onion
  • 4 oranges
  • 4 baby fennels
  • 2 sprigs Mint
  • 3 tbsp olive oil
  • 2 tbsp herb vinegar
  • 1 tsp Honey
  • Salt
  • Pepper (freshly ground)
  • 150 g dried black olives (jar)

Instructions

    Peel the onion and slice it into thin strips. Peel the oranges with a sharp knife, removing all white pith, then cut the fruit into slices. Wash, trim, quarter the fennels, remove the stalks, and finely shave the fennel. Rinse the mint, shake dry, and finely chop.

    Whisk together oil, vinegar, honey, a pinch of salt and pepper. Toss onions, oranges, fennel, mint and olives with the dressing. Let rest for at least 30 minutes to meld flavors, then taste and serve.
