Fennel Salad with Apple and Orange

A fresh fennel salad featuring apple and orange, a delightful fruit salad recipe from Spoonsparrow.

Ingredients

  • 2 bulbs fennel
  • 1 Red Onion
  • 4 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 100 ml Vegetable broth
  • 2 Apples
  • 2 tbsp Apple cider vinegar
  • 3 tbsp orange juice
  • 1 tsp Honey

Instructions

    Wash the fennel, halve it, remove the tough core and thinly slice or shave half of it. Set aside the fennel fronds for garnish.

    Peel and finely dice the onion. Sauté with the fennel in 2 tbsp hot oil for 2-3 minutes until colorless. Season with salt and pepper, deglaze with broth, then set aside to cool lukewarm.

    Wash the apples, quarter them, remove cores and cut quarters into thin strips. Add to the fennel.

  4. 4.

    Whisk vinegar, orange juice, honey and remaining oil together. Season with salt and pepper and fold into the prepared salad ingredients.

    Taste and serve garnished with fennel fronds.
