Fennel in Batter with Lime

Ingredients
- 4 bulbs fennel
- flour (for coating)
- 1 egg
- bread crumbs (for coating)
- 500 ml sunflower oil
- 4 limes
- 3 Stalks Parsley

Clean, wash, quarter the fennel, remove the tough core and cut into 1-2 cm thick slivers. Coat the fennel first in flour, then in beaten egg, and finally in bread crumbs, pressing the crumbs onto the surface.

Fry the fennel strips in hot oil until golden brown, remove and drain on kitchen paper.

Wash limes hot and cut into wedges. Wash parsley, dry and roughly chop.

Arrange the fennel slivers alternately with lime wedges in a circular pattern on a plate and garnish with parsley before serving.
