Banana Blondies
The Banana Blondies from Spoonsparrow are moist, sweet, and perfect for snacking!
Ingredients
- 3 ripe bananas
- 1 egg
- 2 tbsp almond butter (15 g)
- 3 tbsp melted coconut oil
- 60 g whole cane sugar
- 200 g Spelt flour Type 1050
- 1 tsp Baking powder
- 0.5 tsp Baking soda
- a pinch of salt
- 0.25 tsp vanilla powder
- 40 g walnut kernels
- 40 g chocolate chips (at least 70% cocoa)
Instructions

Peel the bananas and mash them finely in a bowl with a fork. Stir in the egg, almond butter, oil, and sugar.

In a separate bowl mix the flour, baking powder, baking soda, salt, and vanilla. Add the dry ingredients to the banana mixture and stir until a smooth, thick batter forms. Roughly chop the walnuts and fold them in with the chocolate chips.

Spread the batter evenly into a square baking pan lined with parchment paper. Bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for 25–30 minutes, until the surface is golden brown and a wooden stick comes out clean.

Let the banana blondies rest in the pan for 10 minutes, then carefully lift them out and let them cool completely. Serve cut into pieces.
