A protein-packed farmer’s pan from Spoonsparrow – delicious and ready in no time!
Ingredients
- 3 cooked potatoes (180 g each)
- 250 g smoked tofu
- 1 Red Onion
- 4 tbsp olive oil
- 1 tsp dried thyme
- Salt
- Pepper
- 4 eggs
- 2 sprigs Basil
Instructions

Cut the cooked potatoes and tofu into cubes. Peel, halve, and slice the onion into half‑rings.

Heat 2 Tbsp of oil in a pan and brown the potatoes over medium heat for about 5 minutes on all sides. Add the onions, smoked tofu, and thyme. Season with salt and pepper and cook for another 5 minutes over low heat.

Meanwhile, heat the remaining oil in another pan and fry the eggs into sunny‑side‑up omelets over medium heat for about 5 minutes. Wash, dry, and shred the basil leaves into strips. Distribute the farmer’s pan with potatoes and tofu onto plates, top each with two fried eggs, and sprinkle with basil.
