Ingredients
- 1 bunch parsley
- 1 bunch dill
- 50 g breadcrumbs
- 50 g hazelnuts (grated)
- 4 tbsp mustard (medium hot)
- 50 g soft butter
- Salt
- ground pepper
- 4 slices cod fillet (125 g each)
- 2 tbsp lemon juice
- 150 g crème fraîche
- 100 g whipping cream
- 1 tbsp vinegar
- 250 ml broth
- 1 tsp Cornstarch
Instructions

Wash and finely chop parsley and dill. Mix the herbs with breadcrumbs and hazelnuts, then stir in mustard and butter. Season the mixture with salt and pepper.

Carefully wash, dry, season, and drizzle cod fillets with lemon juice. Spread the herb-hazelnut mixture over the fillets and press gently to adhere.

Whisk crème fraîche with whipping cream, 2 tbsp mustard, vinegar, and broth until heated through. Stir in cornstarch mixed with a little cold water to thicken the sauce.

Preheat oven to 200°C (180°C fan, gas level 3-4). Place cod fillets in a baking dish, pour sauce over them, and bake for about 30 minutes.
