Chicken Fajitas

Ingredients
- 4 wheat tortillas
- 2 chicken breast fillets
- 1 yellow bell pepper
- 1 red bell pepper
- 1 Red Onion
- 1 chili pepper (finely chopped)
- 1 garlic clove (finely chopped)
- 2 tbsp coriander (chopped)
- Salt
- Cayenne pepper
- 2 tbsp Vegetable oil
- 100 ml poultry broth
- 2 ripe avocados
- Salt
- Pepper (freshly ground)
- 3 tbsp Lime juice
- 1 tbsp corn germ oil
- grated cheddar
Instructions

Wash, pat dry and slice the chicken breasts into strips. Peel, deseed and cut the bell peppers into thin strips. Peel, halve and slice the onion into strips.

Sauté the chicken in hot oil, add the pepper strips and onion, deglaze with broth. Add chili and garlic, simmer for about 10 minutes. Season with salt and cayenne pepper, fold in chopped coriander. Cut avocados, remove pits, mash or puree with a fork, then mix with salt, pepper, lime juice and corn germ oil.

Spread avocado cream on the tortillas (optionally warm each side in a pan without added fat), top with chicken and vegetables, roll up. Sprinkle cheese over the filling and serve.
