Ingredients

  • 400 g farfalle
  • 1 EL olive oil
  • Salt
  • 3 EL peanut butter
  • 3 EL lemon juice
  • Pepper (freshly ground)
  • 2 bunches spring onions
  • 2 chili peppers
  • 0.5 cucumber
  • coriander leaves
  • 2 EL roasted peanuts

Instructions

    Cook the pasta in plenty of boiling salted water until al dente, then drain, rinse with cold water and let rest. Meanwhile whisk peanut butter with lemon juice and 4 EL hot water, seasoning with salt and pepper. Trim and thinly slice spring onions. Wash, deseed chili peppers and cut into thin rings or strips.

    Peel cucumber, halve lengthwise, cut into 5 cm long pieces and then slice into narrow strips.

    Combine half the spring onions and cucumber with chilis and sauce, mix into pasta. Wash coriander, pat dry and tear leaves. Arrange remaining vegetables on plates. Distribute pasta over them, sprinkle roasted peanuts and garnish with coriander leaves before serving.
