Exotic Vegan Pancakes with Mango

With the exotic vegan pancakes with mango from Spoonsparrow you bring a vacation to your breakfast table!

Ingredients

  • 120 g spelt flour type 630
  • 50 g coconut flour
  • 2 tsp Weinstein baking powder
  • 1 pinch salt
  • 2 tbsp coconut blossom sugar
  • 450 ml rice drink (rice milk) with coconut
  • 4 tsp rapeseed oil
  • 0.5 Mango
  • 200 g coconut yogurt
  • 2 tsp chia seeds

Instructions

    Add all dry ingredients for the batter to a bowl and mix. Add the rice-coconut drink and stir into a homogeneous batter. If the batter is too thick, add a splash of rice-coconut drink.

    Heat 2 tsp oil in a non‑stick pan, pour about 1 tbsp batter per pancake, and cook 4 to 6 pancakes for about 3–4 minutes on each side over medium heat until golden brown.

    Peel the mango, remove the pit, and cut into cubes. Arrange the pancakes on three plates, spread coconut yogurt over them, and top with mango cubes and chia seeds.
