Ingredients
- 200 g shrimp (ready to eat; cooked)
- 2 Spring Onions
- 300 g small ripe mango (1 small ripe mango)
- 10 g ginger (1 piece)
- 6 Eggs
- 3 tbsp Milk (1.5% fat)
- 2 tbsp Light soy sauce
- 1 tsp Lime juice
- Salt
- Pepper
- 2 tbsp sesame oil
- 0.5 bunch herbs (e.g., basil)
- 1 Lime
Instructions

Rinse shrimp under cold water and pat dry. Wash spring onions, trim, and slice into thin rings.

Peel mango, remove flesh from pit, and dice into small cubes. Peel ginger and grate.

Whisk eggs with milk and season with soy sauce, ginger, lime juice, salt, and pepper.

Heat oil in a pan. Pour in egg mixture and cook over medium heat, stirring occasionally, until set for about 4–5 minutes.

Add spring onions, shrimp, and mango cubes; warm through for about 2 minutes.

Meanwhile wash herbs and shake dry. Rinse lime under hot water, pat dry, and cut into wedges.

Garnish scrambled eggs with herbs and lime wedges.
