Egg Shells with Filling

Ingredients

  • 8 white eggs (hard boiled)
  • 1 Shallot
  • 100 g smoked trout
  • 3 tbsp sour cream
  • Lemon juice
  • Salt
  • white pepper (ground)
  • 1 tbsp capers
  • 1 piece cooked beetroot (finely diced)
  • dill sprigs

Instructions

    Tap the top of each egg shell to break it and scoop out the yolk with a teaspoon. Dice the whites into small cubes. Peel and finely chop the shallot, then add it to the eggs. Flake the trout and mix in as well. Stir in sour cream and season with lemon juice, salt, and pepper.

    Fill the emptied egg shells again with the mixture and garnish with capers, beetroot, and dill before serving.
