Endive Salad with Turkey Strips

Ingredients

  • 500 g Turkey breast fillet
  • 2 tbsp Soy sauce
  • 1 tbsp honey
  • Pepper
  • 1 small endive or frisée salad
  • 2 tbsp white wine vinegar
  • 1 tbsp lime juice
  • 5 tbsp sprouting oil
  • Salt
  • 12 sage leaves
  • 4 slices Parma ham
  • 3 slices white bread
  • butter (for frying)

Instructions

    Wash turkey, pat dry, cut into wide strips. Mix soy sauce with honey and pepper, marinate turkey for 1 hour, then drain.

    Pan‑fry turkey in a little butter until browned all around.

    Cut Parma ham into bite‑sized pieces.

    Cube white bread and fry in hot butter until golden brown. Briefly sauté sage leaves at the end.

    Whisk lime juice, vinegar, oil, salt and pepper to make a dressing; toss salad, sage, croutons and ham with it. Arrange in bowls, top with hot turkey strips and serve.
