Ingredients
- 1 head endive salad
- 5 sprigs parsley
- 2 oranges
- 3 tbsp olive oil
- 2 tbsp white balsamic vinegar
- 1 tsp Honey
- Salt
- black pepper (freshly ground)
Instructions

Clean the endive salad, separate the leaves from the stem, wash and dry by spinning. Tear the leaves into small pieces. Wash the parsley, shake off excess water, pluck the leaves and finely chop.

Peel the oranges, removing all white membranes, and segment them. Catch the juice that drips out. Place the endive salad with the orange segments and parsley greens in a large bowl.

Whisk together the orange juice, olive oil, balsamic vinegar, and honey. Season with salt and pepper. Toss the endive salad with the orange dressing and parsley. Serve immediately.
