Ingredients
- 500 ml apple juice
- 1 Vanilla bean
- 1.5 kg sugar
- 2 untreated lemons
- 15 elderflower buds
- elderflower for garnish (deveined)

Bring the apple juice with 1 l water, split vanilla bean and sugar to a boil. Simmer gently over low heat for about 10 minutes. Then let cool lukewarm. Wash lemons hot, pat dry and slice. Do not wash elderflowers; just shake off excess liquid. Combine with lemon slices in a large jar or bowl. Pour the syrup over and cover, letting it steep for about two days. All ingredients should be fully covered.

Before bottling strain through a cheesecloth and briefly reboil while stirring. Fill prepared bottles and seal tightly. Add a few deveined elderflowers if desired.
