Ingredients

  • 25 g dandelion (still young and closed)
  • 25 g daisy flower (still young and closed)
  • 130 ml vinegar (e.g., herb vinegar)
  • 0.5 TL salt
  • 1 bay leaf

Instructions

    Wash the flower buds cold and let them drain on kitchen paper.

    Bring the vinegar with the salt and the scored bay leaf to a boil. Add the flower buds to the liquid and let them briefly swell. Immediately transfer to a canning jar, filling it completely with the liquid. Seal well and let steep in a cool dark place for about 1 week. Afterwards use as regular capers.
