Ingredients

  • 400 g elderberries
  • Applesauce clear (as needed)
  • 500 g sugar

    Strip the elderberries, remove stems, rinse, and cover with 1.5 l water; bring to a boil. Let simmer gently for about 15 minutes, then strain through a cloth-lined sieve. Allow to drip overnight if desired, but do not press unless a darker syrup is preferred.

    Fill the liquid with applesauce to reach 1 l and stir in the sugar. Bring to a boil and cook for about 5 minutes. Pour into prepared glasses, seal tightly, and let cool.
