Ingredients

  • 2 egg yolks
  • 40 g powdered sugar
  • 200 ml milk
  • 150 g whipping cream
  • 100 ml elderflower syrup
  • 1 tbsp Lemon Juice

Instructions

  1. 1.

Beat the egg yolks and sugar until thick and creamy. Warm the milk and slowly pour it in a thin stream while stirring. Return the egg‑milk mixture to the pot and heat gently, stirring, until the custard thickens—do not boil! Set aside to cool.

  2. 2.

Whip the cream stiffly and fold it together with the syrup. Season with lemon juice and pour into an ice machine. Freeze for about 20–30 minutes. Alternatively, transfer to a shallow bowl and place in the freezer, stirring vigorously every 20–30 minutes to prevent large crystals; freeze for a total of 5 hours. Finally, scoop the ice cream into bowls and garnish with elderflowers.
