Yogurt Blueberry Ice Cream

Ingredients

  • 500 ml yogurt
  • 125 g sugar
  • vanilla sugar
  • 3 tbsp coconut liqueur
  • 1 Egg white
  • 2 sheets gelatin
  • 400 g blueberries (picked and washed)
  • 125 g sugar
  • juice of one lemon
  • 3 tbsp cassis

Instructions

    Whisk yogurt with sugar and vanilla sugar until fluffy, fold in the dissolved gelatin and stiffly beaten egg white, pour into a freezer tray and chill slightly, stirring repeatedly.

    Blend fruits and strain through a sieve, whisk with sugar, cassis and lemon juice until frothy.

    Take frozen yogurt ice cream from the freezer, mix in blueberry purée, spoon into serving glasses as desired and freeze for at least 3 hours.
