Lebkuchen einfach

- 300 g rye flour (Type 997)
- 100 g sugar
- 3 tbsp brown sugar
- 50 g ground almonds
- 1 tbsp finely chopped orange zest
- 150 g honey
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp Lebkuchengewürz
- a pinch cardamom
- a pinch ground cloves
- 1 egg
- 1 yolk
- 4 g potash
- 4 g salt of the deer antler
- 100 g powdered sugar
- 1 Egg white

Combine flour, sugar, almonds, cinnamon, nutmeg and Lebkuchengewürz in a bowl; mix together and press a well into the center. Add honey with orange zest. Beat eggs together and add them as well. Whisk potash and deer antler salt with 1-2 tbsp cold water until smooth and pour in. Knead everything into a smooth, shiny dough, adding more water if needed. Shape the dough into a long ridge (3 cm diameter) and cut 2.5 cm pieces. Form balls and place them spaced apart on parchment‑lined baking sheet; bake in preheated oven at 180 °C for about 20 minutes.

Take the finished Lebkuchens to cool on a wire rack. Make a glaze from powdered sugar and egg white, spread it over the cookies and let dry.
