Ingredients

  • 500 g elderberries
  • 2 pears
  • 300 ml black currant juice
  • 100 ml apple juice
  • 2 tbsp honey
  • 1 untreated lemon
  • 1 vanilla pod
  • 2 tbsp Cornstarch

    Wash the elderberries and drain well. Peel the pears, quarter them, remove the core, and cut the quarters into pieces. Bring the black currant juice with wine (if desired) and honey to a boil, sweetening as preferred. Cut a strip of lemon zest and add it along with the squeezed juice and split vanilla pod to the pot.

    Add the pear pieces and elderberries, let them simmer for 2-3 minutes, remove the vanilla, and thicken the compote by stirring in cornstarch dissolved in cold water. Spoon the compote into bowls, cool slightly, and serve.
