Ingredients

  • 500 g flour
  • 1 packet dry yeast
  • 350 ml milk (lukewarm)
  • 3 tbsp sugar
  • a pinch of salt
  • 3 egg yolks
  • 50 g butter
  • 50 g walnuts (chopped)
  • 100 g nuts (ground)
  • 4 tbsp sugar
  • 4 egg yolks
  • 50 g sugar
  • 100 ml White wine
  • 0.5 untreated lemon (including juice and zest)
  • powdered sugar (for dusting)

Instructions

    Mix the flour with the yeast. Stir the milk with sugar, salt and egg yolk into the flour and knead until the dough no longer sticks and lifts from the bowl edges. Then roll it on a floured surface into a log and cut into about 24 equal pieces. Shape each piece into a small round dumpling. Melt some butter in a pan, brush the dumplings all over with the fat and place them tightly next to each other in the pan. Let rise in a warm spot for about 30 minutes. Then sprinkle with ground and chopped nuts and sugar. Preheat the oven to 180 °C. Place the pan on the middle rack and bake for 30 minutes until golden brown. Remove and serve with wine foam.

    Whisk the egg yolks with sugar in a stainless steel bowl until frothy, add white wine and lemon zest. Place the bowl over a warm water bath and beat the cream with an electric hand mixer until thick and airy. Finish by seasoning with lemon juice.
