Ingredients
- 300 g pappardelle
- 8 artichokes pickled in oil
- 3 tbsp pine nuts
- 0.5 bunch Parsley
- Salt
- Pepper (freshly ground)
- 8 slices Parma ham (or Spanish Serrano)
- 2 tbsp white balsamic vinegar
- olive oil
- 0.5 bunch arugula

Cook pappardelle in boiling salted water al dente. Drain and toss with 2 tbsp olive oil. Let cool. Drain artichokes and halve them. Toast pine nuts briefly in a dry pan. Wash parsley and finely chop. Wash arugula and pat dry. Whisk together 4 tbsp olive oil, balsamic vinegar, parsley, pine nuts, 2 tbsp water, salt, and pepper to make a vinaigrette.

Arrange pappardelle with artichokes, arugula, and Parma ham on plates. Drizzle with the vinaigrette. Season with additional salt and pepper as desired.
