Eggplant Mille-Feuille with Goat Cheese

Ingredients

  • 2 Eggplants
  • Salt
  • 200 g goat cheese roll
  • 2 tbsp olive oil
  • Pepper (freshly ground)
  • 4 tbsp balsamic vinegar

Instructions

    Clean, wash, and slice the eggplants. Salt them and let sit for about 30 minutes; then pat dry with kitchen paper. Preheat the oven to 200°C (392°F). Slice the goat cheese roll into rounds. Alternate layers of eggplant slices and cheese to form four small towers. Place in a baking dish, drizzle with olive oil, and season with salt and pepper.

    Bake in the preheated oven for 25–30 minutes. Drizzle with balsamic vinegar and serve alongside a green salad.
