Easter Yeast Buns

Ingredients
- 500 g flour
- 1 cube yeast (42 g)
- 75 g sugar
- 250 ml lukewarm milk
- 50 g butter
- 1 egg
- 150 g dried apricots
- 10 eggs (hard‑boiled and colored)
- 1 yolk
- flour (for dusting)
- powdered sugar (for sprinkling)
Instructions

Sift the flour into a bowl, press a well in the center. Dissolve the yeast in some lukewarm milk, stir in 1 tablespoon of sugar and pour it into the well; sprinkle with flour and let rise covered for 30 minutes.

Add the remaining milk, sugar, butter and egg to the dough, knead until smooth and cover for another hour.

Preheat the oven to 180 °C fan. Line a baking tray with parchment paper.

Finely chop the apricots and knead them into the dough with a little flour. Divide the dough into 10–12 equal pieces, roll each into a ~20 cm long rope on a floured surface. Cut each rope lengthwise, twist into a cord, form a circle and press the ends together in the middle. Place on the tray, brush with yolk mixed with 2 tablespoons of water, sprinkle powdered sugar and bake for 20–25 minutes until golden brown.
