Ingredients
- 1 egg
- 75 ml neutral oil
- 100 g Sour cream
- 200 g Flour
- 100 g sugar
- 1 packet baking powder
- 1 tsp salt
- 100 g powdered sugar
- 1 tbsp Lemon Juice
- pink food coloring
- green sugar lettering
- colorful confectionery

Preheat the oven to 200 °C (top/bottom heat) and place paper muffin cups into a muffin tin. In a bowl whisk together the egg and oil, then stir in the sour cream. In another bowl combine flour, sugar, baking powder, and salt; gently fold this dry mixture into the wet batter. Pour the dough into the cups and bake for about 20 minutes on the middle rack (do a toothpick test!). Remove and cool on a wire rack.

For garnish whisk powdered sugar with lemon juice and food coloring until thick and smooth, then brush over the muffins. Let them dry, then paint grass with green sugar lettering and attach small sugar eggs with icing. Allow to dry thoroughly.
