Savory Mushroom and Pine Nut Muffins

Ingredients
- 200 g Flour
- 2 tsp Baking powder
- 5 tbsp freshly grated Parmesan
- 0.5 tsp Salt
- Nutmeg (freshly grated)
- 1 egg
- 80 ml olive oil
- 200 g Sour Cream
- 300 g Mushrooms
- 1 Shallot
- 60 g pine nuts
- 1 tsp fresh chopped parsley

Preheat the oven to 180°C with top and bottom heat. Line the muffin tin cavities with paper liners.

Mix flour, baking powder, Parmesan, salt, and nutmeg. Whisk the egg with 60 ml oil and sour cream; fold into dry mixture until all dry ingredients are moist. Rub mushrooms with a kitchen towel, halve or quarter them. Peel and finely chop the shallot. Toast pine nuts in a hot pan without fat until golden yellow, remove and set aside. Heat remaining oil in the pan and sauté the shallot until translucent. Add mushrooms, cook 3-4 minutes, stir in herbs, salt, and pepper. Remove from heat, let cool slightly, then fold in pine nuts.

Fold two-thirds of the mushroom filling into the batter, spoon into prepared liners, and top with remaining mushroom mixture. Bake in preheated oven for about 25 minutes.
