Ingredients

  • 300 g flour
  • 0.5 TL salt
  • 2 TL baking powder
  • 0.5 TL paprika (sweet)
  • 1 TL herbs de Provence (dried)
  • 150 g parmesan (freshly grated)
  • 300 ml buttermilk
  • 1 egg
  • 5 EL olive oil
  • butter
  • bread crumbs
  • 1 muffin tin (or 12 paper cups)

Instructions

    Mix flour with salt, baking powder, paprika and herbs; fold in cheese and stir together with buttermilk, egg and oil.

    Grease the muffin tin or cups with butter, dust with breadcrumbs, and spoon the batter into each cup.

    Bake in a preheated oven at 200°C for about 20 minutes (check doneness with a wooden stick).

    Remove, let cool slightly in the cups, then release and set on a cooling rack to finish cooling.
