Sweet Potato Banana Gratin

Sweet potato banana gratin by Spoonsparrow is always really good.

Ingredients

  • 400 g red sweet potatoes
  • 2 cooking bananas
  • 1 large onion
  • 1 tsp fresh chopped ginger
  • 2 red chilies
  • 4 tbsp oil
  • 125 ml Vegetable broth
  • 300 ml unsweetened coconut milk (canned)
  • 2 vanilla beans (aroma)
  • 2 tbsp Curry Powder
  • Salt
  • 2 tsp cane sugar
  • 1 tsp cinnamon powder
  • 20 ml rum
  • 10 g grated Gruyère cheese
  • fat for the dish

Instructions

    Wash, peel and dice sweet potatoes. Peel bananas and cut into thick slices; peel onion and finely chop. Halve chilies lengthwise, deseed, wash and slice into thin strips. Heat oil in a pot. Sauté onions, chilies and ginger. Add banana slices and fry for about 6 minutes, turning once. Pour in broth and coconut milk, cover and simmer gently for 10 minutes. Stir in vanilla aroma, add sweet potato pieces, season with curry powder, salt, sugar, cinnamon and rum, and cook another 10 minutes.

    Mix two-thirds of the cheese into the banana-sweet potato mixture, pour into a greased baking dish. Sprinkle remaining cheese on top and bake at 200°C for about 20 minutes until golden.
