Duck Satay

Ingredients

  • 700 g duck breast fillet (2 duck breasts)
  • 4 tbsp orange juice
  • 2 tbsp Soy sauce
  • 1 Garlic clove
  • 1 tsp Sambal oelek
  • 0.5 tsp ground cumin
  • 1 tsp ground coriander
  • 400 g fresh plums
  • 100 ml plum juice
  • 1 tbsp Lemon Juice
  • 3 tbsp plum jam
  • Salt
  • pepper (ground)
  • oil (for frying)
  • 20 long wooden skewers

Instructions

    Wash the duck breasts, pat dry and cut lengthwise into about 20 0.5 cm wide strips. Thread each strip onto a skewer in a zig‑zag pattern.

    Combine orange juice and soy sauce in a shallow bowl. Peel and press garlic. Add 1/2 tsp sambal oelek, cumin and 1/2 tsp coriander and mix well. Marinate the duck skewers in this for about 3 hours.

    Wash plums, halve and pit them. In a pot add plum juice, lemon juice, remaining sambal oelek and coriander; simmer over medium heat for about 10 minutes. Remove from heat, stir in plum jam and blend until smooth. Season with salt and pepper and let cool.

    Heat oil in a pan and sear the skewers in batches over high heat on both sides for about 3 minutes each. Season with salt and pepper. Serve with plum sauce.
