- 400 g smaller duck breast fillets (2 smaller duck breast fillets)
- Salt
- pepper (from the mill)
- butter (for frying)
- 4 shallots (chopped)
- 250 ml red Bordeaux wine
- 1 tsp fresh thyme leaves

- 50 g butter
- parsley (for garnish)
Instructions

Season duck breast fillets with salt and pepper. Fry in hot butter for 3 minutes on each side. Remove from pan and finish in a preheated oven at 100°C for 25-30 minutes.

Sauté the pan drippings, deglaze with wine. Add fresh thyme and reduce over high heat. Remove from heat, whisk in small pieces of butter with a whisk. Season with salt, pepper, and nutmeg.
