Duck Breast with Figs

Ingredients

  • 3 released Barbarie ducks
  • 2 tbsp fig mustard
  • Salt
  • freshly ground pepper
  • 1 bunch spring onions
  • 1 tbsp oil
  • 2 tbsp balsamic vinegar
  • 200 g green figs

Instructions

    Score the skin of the duck breasts in a diamond pattern, brush all sides with fig mustard.

  2. 2.

    Sear in hot oil skin-side down, season with salt and pepper, flip and cook for about 15 minutes.

    Trim spring onions into rings and sauté in remaining oil. Deglaze with balsamic vinegar.

    Add drained figs, serve hot alongside the sliced duck breast.
