Simple Potato Pancakes
Simple potato pancakes from Spoonsparrow taste great for the whole family and come with a spicy topping – try it yourself!
Ingredients
- 4 pickles
- 800 g starchy potatoes
- 2 egg yolks
- 1 tbsp potato starch (10 g)
- 2 tbsp spelt whole grain flour (10 g)
- Salt
- nutmeg
- 6 tbsp rapeseed oil
- 4 herring fillets (80 g each)
- 0.5 Organic lemon
- 5 radishes
- 30 g radish sprouts
- herbs as desired

Dice 4 pickles finely. Peel, wash and grate the potatoes; squeeze out excess moisture. Mix grated potatoes with pickle cubes, egg yolks, starch and flour. Season the mixture with salt and a pinch of freshly grated nutmeg.

In a large pan, fry 16 simple potato pancakes one after another. Heat 1–2 tbsp oil for each pancake and pour 1½–2 tbsp of batter into the hot oil, flatten it, and cook on both sides over low to medium heat until golden brown in 8–10 minutes. Drain finished pancakes briefly on kitchen paper and keep warm in a preheated oven at 80 °C (fan 60 °C; gas: level 1).

Meanwhile, strip the herring fillets, pat them dry and cut into thin strips. Peel one lemon half hot, slice it then quarter it. Slice remaining pickles into rounds. Clean, wash and slice radishes. Rinse radish sprouts thoroughly and pat dry.

Top the simple potato pancakes with herring strips, pickle slices, lemon quarters, and radish slices. Sprinkle radish sprouts on top and garnish with herbs if desired.
