Duck Breast Skewers with Plum Dip

Ingredients
- 2 duck breast fillets (about 350 g)
- 4 tbsp orange juice
- 2 tbsp Soy sauce
- 1 Garlic clove
- 1 tsp Sambal oelek
- 0.5 tsp cumin
- 1 tsp coriander
- 400 g plums
- 100 ml plum juice
- 1 tbsp Lemon Juice
- 3 tbsp plum jam
- Salt
- Pepper (freshly ground)
- oil (for frying)
- 20 wooden skewers
Instructions

Wash and pat dry the duck breast fillets, then cut lengthwise into about 0.5 cm wide strips. Thread one strip onto each wooden skewer in a zig‑zag pattern.

Combine orange juice and soy sauce in a shallow bowl. Peel and press the garlic. Add ½ tsp sambal oelek, cumin, and ½ tsp coriander; whisk well. Marinate the skewers in this mixture for about 3 hours.

Wash, halve, and pit the plums. In a pot add the plums, plum juice, remaining sambal oelek, and coriander; simmer over medium heat for about 10 minutes. Remove from heat, stir in plum jam, then puree. Season with salt and pepper and let cool.

Heat oil in a pan and sear the skewers in batches on high heat, browning each side for about 3 minutes. Season with salt and pepper and serve with the plum sauce.
