Ingredients

  • 8 dried tomatoes (as large as possible)
  • 4 tbsp balsamic vinegar
  • 2 tbsp capers
  • 4 tbsp freshly grated Parmesan
  • 3 tbsp chopped almond kernels
  • 1 tbsp fresh chopped mint
  • 2 tbsp olive oil
  • Salt
  • Pepper (freshly ground)

Instructions

    Rinse the tomatoes with vinegar and water and soak for about 8 hours. Chop the capers, mix with parmesan, mint, salt, pepper, and one tablespoon of oil; let it sit a bit and taste. If the paste is too thick add more oil; if too soft add more parmesan or almonds until it reaches a moldable, soft pasty consistency.

    Drain the tomatoes in a sieve. Brush them with oil, season with salt and pepper, then use a teaspoon to place a small mound of filling on the inside of each tomato, roll up, and secure with a toothpick. Arrange on a plate and serve with white bread.
