Dinkel Spirals with Apples and Walnuts

Ingredients

  • 150 g light spelt flour
  • 0.5 packet Baking powder
  • 100 g low‑fat quark
  • 25 g sugar
  • 3 tbsp olive oil
  • 2 tbsp skim milk
  • 15 g butter
  • 2 tart apples
  • 25 g walnut kernels
  • 1 tsp cinnamon
  • flour (for the work surface)
  • parchment paper

Instructions

    Sift flour into a bowl. Add baking powder, quark, sugar and oil, then knead with an electric hand mixer’s dough hooks until combined. Gradually add milk until a smooth dough forms.

    Turn the dough onto a floured surface and quickly knead again, rolling it into a 40 × 30 cm rectangle.

    Melt butter and spread over the dough. Peel apples, grate finely, and distribute over the dough. Chop walnuts and sprinkle with cinnamon. Roll tightly from the long side, then cut into ~1.5 cm thick slices. Place on a parchment‑lined baking sheet.

    Bake in a preheated oven at 200 °C (second rack) for about 15 minutes until golden brown.
