Dim Sum with Pork Filling

Ingredients
- 300 g ground pork
- 1 piece fresh ginger (ca. 2 cm)
- 4 water chestnuts (canned)
- 2 Spring Onions
- 100 g shrimp (pre-cooked)
- 125 g flour
- 1 tsp turmeric powder
- 1 tbsp soy oil
- Salt
- 0.25 tsp Chinese chili sauce
- flour (for rolling)
- 1 tbsp soy sauce
- 1 egg
Instructions

Whisk flour with 5-6 tbsp water, 1 tbsp oil, salt and turmeric into a smooth dough that does not stick. Cover the dough in a cloth and let rest for 30 minutes.

Chop shrimp. Clean spring onions and cut into thin rings. Peel ginger, drain water chestnuts and finely chop both together.

Combine ground pork with spring onions, ginger, water chestnuts, shrimp, egg, chili sauce and soy sauce well.

Divide the dough into 20 portions and roll each on a floured work surface.

Place about 1 tsp of filling onto each dough piece. Fold the edges up and press around to seal.

Arrange the dumplings in a bamboo steamer without touching. Heat a wok with some water, place the steamer inside, cover and steam over medium heat (in batches) for about 15 minutes.
