Ingredients
- 200 g wheat starch
- a little boiling water
- 125 g chopped shrimp
- 1 tsp freshly grated ginger
- 1 tbsp Sesame oil
- pepper (ground)
- 1 tbsp finely sliced onions (or scallions)
- Salt
- 6 tbsp soy sauce
- 4 tbsp white wine vinegar

Mix wheat starch with water, adding small amounts while kneading, to form a smooth, pliable dough. Roll thinly and cut into 8–10 cm circles. Combine shrimp, ginger, sesame oil, pepper, onion (or scallion), and salt; place filling in the center of each circle.

Fold the dough over, alternating seam edges into folds to create a zig‑zag or round seal. Steam in a bamboo steamer for 10 minutes. Mix all sauce ingredients together and serve alongside.
