Ingredients
- 2 scallions
- 2 tbsp butter
- 2 tbsp spelt whole-grain flour
- 200 ml vegetable broth
- 300 ml milk (3.5% fat)
- 2 tbsp crème fraîche
- 1 tsp sharp mustard
- Salt
- Pepper
- 1 tsp liquid honey
- 1 bunch dill
Instructions

Peel and finely chop the scallions, then sauté them in hot melted butter until translucent. Sprinkle with flour, stir briefly, deglaze with vegetable broth, and let thicken while stirring.

Blend everything smoothly, pour in milk, simmer to a creamy consistency, then fold in crème fraîche and mustard. Season with salt, pepper, and honey. Wash, dry, finely chop the dill, and stir it in at the end.
