Spoonsparrow Spinach Cauliflower Casserole tastes great again!

Ingredients

  • butter (for the pan)
  • 1 head cauliflower
  • Salt
  • 1 small onion
  • 1 clove garlic
  • 250 g fresh spinach leaves
  • 1 tbsp Olive Oil
  • nutmeg
  • 200 ml heavy cream
  • 100 ml milk
  • 100 g grated Emmental cheese
  • 2 Eggs
  • pepper (ground)
  • 0.5 tsp Curry Powder

Instructions

    Preheat the oven to 180°C fan.

    Grease a casserole dish with butter. Rinse the cauliflower, cut into small florets and blanch in salted water for about 2 minutes. Shock in cold water and drain well.

    Wash and dry the spinach. Peel and finely chop the onion and garlic. Sauté them in hot oil until translucent. Add the spinach and cook until wilted. Let the liquid evaporate and season with salt and nutmeg.

    Fill the greased dish with cauliflower and spinach. Whisk together cream, milk, cheese, and eggs; season with salt, pepper, and curry. Pour over the vegetables and bake for about 25 minutes until golden brown.

    Remove from oven and serve immediately.
