Ingredients

  • 150 g butter
  • 150 g sugar
  • 3 eggs
  • 1 untreated lemon (juice and zest)
  • 150 g flour
  • 50 g ground hazelnuts
  • 0.5 tsp Baking powder
  • 120 g soft butter
  • 60 g sugar
  • 120 g cream cheese
  • 150 g powdered sugar
  • 12 sugar flowers

Instructions

    Preheat the oven to 180°C fan-forced. Line the wells of a muffin or cupcake tin with paper liners.

    Beat the butter and sugar until fluffy. Whisk in the eggs, lemon juice and zest, then fold in the flour, hazelnuts and baking powder. Mix well and spoon into the liners. Bake for about 25 minutes until golden brown. Remove from oven and let cool.

    For the cream, beat the butter and sugar until creamy, then mix in the cream cheese. Gradually stir in powdered sugar until a spreadable consistency is achieved. Spread over the cooled cupcakes and decorate with the sugar flowers.
