- 12 paper muffin cups
- 3 eggs
- 50 g sugar
- 80 g softened butter
- 50 g ground almonds
- 100 g flour
- 1 tsp Baking powder
- 125 g dark couverture chocolate
- 70 g mascarpone
- 50 g chocolate shavings

Preheat the oven to 180°C (350°F) with top and bottom heat.

Place the paper cups in a muffin tin. Beat the eggs, sugar, and butter until light and creamy. Add the almonds, flour, and baking powder; mix into a smooth batter. Fill the cups and bake for 25-30 minutes in the preheated oven. Meanwhile, roughly chop the chocolate and melt it over a hot water bath. Let the melted chocolate cool slightly and combine with mascarpone. Remove the finished cupcakes, let them cool briefly, then top with the chocolate cream and chocolate shavings before serving.
