Ingredients

  • 200 g dandelion
  • 2 bulbs fennel
  • 1 Papaya
  • 0.5 bunch coriander leaves
  • 2 tbsp olive oil
  • 2 tbsp Apple cider vinegar
  • 50 ml Vegetable broth
  • Salt
  • ground pepper
  • cress blossoms (for garnish)

Instructions

    Clean and wash the dandelion and fennel. Peel, halve, seed the papaya and cube one half. Wash the coriander, shake dry and blend with the remaining papaya, 1 tbsp oil, vinegar and broth; season the salad dressing with salt and pepper.

    Slice the fennel bulb with stalk into rounds, season with salt and pepper, brush with remaining oil and grill each side for about 4 minutes. Arrange the grilled fennel with dandelion, salad dressing and papaya cubes on a plate and garnish with cress blossoms as desired.
