Daikon Radish Salad with Glass Noodles

Ingredients
- 100 g glass noodles
- 1 daikon radish
- Salt
- 1 Green Chili Pepper
- 2 tbsp white wine vinegar
- 2 tbsp rice wine
- a pinch of sugar
- 3 tbsp oil
- 100 g chickpeas
- 2 tsp sesame oil
Instructions

Soak glass noodles in boiling water and let them swell for about 15 minutes.

Peel, clean, and slice the daikon radish thinly. Sprinkle with a little salt and set aside for about 10 minutes.

Clean and finely chop the chili pepper. Heat vinegar, rice wine, and chili together. Season with salt and sugar, then stir in the oil.

Pat the daikon dry, pour the dressing over it, and let it marinate for about 15 minutes. Drain the noodles and cut them into smaller pieces if desired. Let the chickpeas drain. Mix daikon, noodles, chickpeas, and sesame oil together and serve.
