Curry of Stockfish with Tomatoes and Onions

Ingredients
- 400 g stockfish
- 6 onions
- 2 Garlic cloves
- 6 tomatoes
- 2 cm fresh ginger
- 3 tbsp Sesame oil
- 2 tbsp yellow curry paste
- 120 ml fish stock
- chili powder

Soak the stockfish for about 24 hours, changing the water at least four times. Then rinse, pat dry and cut into pieces.

Peel the onions and garlic. Halve the onions and slice them lengthwise into thin strips. Dice the garlic finely. Blanch the tomatoes in boiling water, peel, quarter, remove seeds and dice small. Peel and dice the ginger finely.

Heat the oil in a pan and sauté the onions, garlic and ginger while stirring. Briefly cook in the curry paste. Add the tomatoes and pour in the stock. Simmer for about 5 minutes. Then add the fish and simmer covered on low heat for about 15 minutes. Season with chili powder and serve.
