Ingredients

  • 2 cloves garlic
  • 1 piece ginger (ca. 3 cm)
  • 2 tbsp sesame oil (and oil for the pan)
  • 2 tbsp Curry Powder
  • Salt
  • black pepper (freshly ground)
  • 2 whole chickens (≈1 kg each)
  • 1 Zucchini
  • 150 g dried dates
  • 1 tbsp butter
  • 200 g Couscous
  • Cayenne pepper
  • a splash lemon juice

Instructions

    Preheat the oven to 175°C with upper and lower heat. Peel and finely chop the garlic and ginger. Sauté both in hot oil. Remove from the pan and mix with curry powder, salt, and pepper. Wash the chickens, pat dry, and rub with the curry mixture. Place in a greased baking dish and bake for about 1 hour.

    Wash, trim, and dice the zucchini. Pit and cube the dates. Sauté the zucchini in hot butter. Add 400 ml water, sprinkle in the couscous, bring to a boil, remove from heat, and let it absorb liquid. Stir in the dates and season with salt, pepper, and lemon juice.
