Yellow Cauliflower Curry
Spoonsparrow yellow cauliflower curry is easy to prepare and always delicious.
Ingredients
- 4 passion fruits
- 1 can mango (225 g drained weight)
- 2 shallots
- 2 tbsp Vegetable oil
- 200 ml coconut milk
- 400 ml vegetable broth (vegan)
- 2 tbsp sweet mustard (vegan)
- 1 tsp curry powder
- 1.2 kg cauliflower
- Salt
- Pepper (freshly ground)
- 4 tbsp amaranth (popped)

Instructions

Halve the passion fruits and put the pulp in a small pot. Simmer for 3-5 minutes until the seeds separate from the pulp, then strain through a sieve into a bowl. Add the mango with 2-3 tbsp liquid and blend everything.

Peel and finely chop the shallots. Sauté them in hot oil until translucent. Deglaze with coconut milk and broth, stir in mustard and curry powder, add the fruit puree, bring to a boil and let it reduce into a creamy sauce for about 10 minutes.

Wash the cauliflower, cut into florets, and place in a steamer basket. Steam over salted water for about 6 minutes until tender.

Season the sauce with salt and pepper, serve over the steamed cauliflower, and sprinkle with amaranth and cress.
